Greek Kalamata Olive Burgers
I developed this recipe two summers ago when experimenting with "international" burgers as an alternative to regular burgers. Something happened the first time I was typing my recipe! I apologize!
1 1/2 lbs ground turkey
1 1/2 cups pitted kalamata olives
1 cup fresh oregano leaves, tightly packed
1/2 cup fresh basil leaves, tightly packed
1 1/4 cups grated Kasseri cheese
1/2 tsp (or to taste) freshly ground black pepper
1/2 cup extra virgin oilve oil
3 TBS fresh lemon juice
freshly ground black pepper to taste
6 whole grain burger buns
softened butter or olive oil to brush on the buns before grilling
olive oil spray for the grill rack
Tomato ketchup - optional
In a food processor, put the kalamata olives, oregano and basil. Pulse 10-12 times until roughly chopped. Put the ground turkey in a large mixing bowl, add the chopped mix from the processor, the grated Kasseri cheese and the black pepper to taste. Mix well with your hands and form into 6 6oz. portions. Flatten into thick patties about 4" across. Combine the basting mix ingredients. Grill over nicely ashed coals, about 6" above the coals. Brush each burger with the basting mix before flipping. Grill, covered, turning and basting every five minutes for a total of 25 minutes (160-165 on a thermometer). Brush the buns with soft butter or olive oil and grill until toasted, about 5-8 minutes.
These freeze very well. My husband likes them with ketchup but I prefer them just the way they are.
