Greek Hummus Burgers

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

Makes 6 burgers
2 lbs ground chuck
1 clove minced, fresh garlic
2 tbs finely chopped flat leaf parsley
3 tbs, oil packed, julienne, sun dried tomatoes, drained, patted dry and coarsely chopped
1 tsp coarse salt
1/4 tsp fresh ground black pepper
2 tbs Colavita olive oil, to brush grill
4 oz of a 6 oz block feta cheese, divided into 6 equal portions
6 Ciabatta rolls, halved OR Cuban bread, cut into 6 4" pieces, and halved
2 tbs Colavita olive oil for rolls
6 tbs prepared, roasted garlic hummus OR hummus of choice – it comes in several flavors- 7 oz container
6 red tip lettuce leaves (optional)

 

Instructions

Prepare grill to medium high heat. Mix beef, garlic, parsley, sun dried tomatoes, salt and pepper in large mixing bowl. Divide mixture into 6 patties shaped same as rolls. Brush grill with olive oil. Grill burgers 4 minutes each side or to desired doneness. Meanwhile, brush rolls with olive oil. One minute before burgers done, place portions of feta on each burger and place rolls on grill. Cover grill to melt/soften cheese. Remove rolls and put one lettuce leaf (if desired) on each roll bottom. Add burgers and top feta burgers with 1 tbs hummus each. Top each burger with roll top and serve hot.
