Greek Chicken Burger
The Greek Chicken burger was inspired by light cooking and simple, everyday ingredients. Though there are few ingredients, the flavor is tremendous.
Ingredients:
2 pounds ground chicken
1 cup crumbled feta cheese
1 tbs lemon juice
1 tbs oregano
2 tsp garlic
1 tsp salt
1 tsp pepper
5 oz frozen spinach (1/2 box), thawed and drained
1 cup sour cream
1 cup mayonnaise
1 tsp garlic
1 tsp salt
½ tsp lemon juice
Vegetable oil for grill
6 french hamburger rolls
Olive oil for rolls
Instructions:
Preheat gas grill to medium-high.
Squeeze excess moisture from spinach. Place spinach, sour cream, mayo, garlic, salt and lemon juice in a food proccessor fitted with a blade. Blend mixture until it is just smooth. Refrigerate until serving.
In a large mixing bowl, add the ground chicken, feta, lemon juice, oregano, garlic, salt and pepper.
With your hands, mix until just bleneded. Shape into 6 patties.
Brush the rack with oil. Place the patties on the rack, cover and cook for 4-5 minutes. Gently flip patties and grill for 4-5 minutes more. Split open hamburger rolls and brush with olive oil. Grill face down just a minute or two, until lightly toasted.
Top each roll with a patty and heaping spoon full of spinach mayo.
