Though I'm of German and Danish dissent, I absolutely love greek and mediteranian foods. Anything with fennel and liccorice flavors are to die for, and give me some feta or goat cheeses any time of the day!! These burgers have HUGE flavors and satisfy almost any palate I've found. Oh yea, I have a beautiful representation on Athena on my back (don't tell anyone I have a tattoo). I like to think she's helping and influencing me to be the goddess that I am (or trying to be)!!!!
1 sweet onion chopped (vidalia or walla walla)
7 ounces butter (3 ounces reserved for buns/bread)
3 tablespoons extra virgin olive oil
2 tablespoons Ouzzo (or liccorice liqueur)
1 1/2 pound ground 80/20 sirloin
1 large fennel bulb chopped (reserve 3 tablespoons greens minced)
1 teaspoon ground sage
1 teaspoon ground rosemary
1/4 cup beef broth (no salt added).
6 tablespoons prepared calamata olive (with capers)tapenade.
6 0unces low fat, low sodium goat cheese
6 4 inch by 4 inch Fat Pita (or plain foccia bread)
1 small red onion sliced in 1/4 inch slices
2 large ripe red tomatoes sliced in 1/3 inch slices
1 large bunch of arugula, washed & dried (6 ounces)
t,he "step by step" instructions field has dissappeared so I'm using this one? In sauce pan brown sweet onion in 4 ounces butter on middle of grill (10 -12 minutes), add 3 tablespoons Ouzzo evaporate alcohol (4-5 minutes),move to outter grill. Patties: Crumble beef into large mixing bowl, add onion mixture, chop fennel bulb icluding greens. Add chopped bulb and 2 tablespoons greens to meat mixture. Add 1 teaspoon of ground sage to meat mixture. Add 1 teaspoon of ground rosemary to meat mixture Add 1/4 cup beef broth (no added salt) to meat mixture. Mix ingredients with hands and form into 6 even patties. Cook over medium heat for 6 minutes on each side. Crumble 1 ounce of goat cheese (low fat, low sodium)after moving burgers to outter grill and melt Slice bread in 1/2 and butter with 1/2 ounce butter ad place on outter grill for 1 to 2 minutes. Remove bread from grill and spread 1 tablespoon olive tapenade on bottom 1/2 of bread, place 1 burger on each half. Place 1 large tomato slice, 2 large onion slices and 1 handfull (1 ounce) of arugula on burger, drizzle 1 teaspoon extra virgin olive oil on arugua. Place top piece of bread on burger and veggies and enjoy!!
