Greatest of All Time Aloha Burger

Ingredients

Mountain Goat CheeseSpread:

8oz. Fresh farmer goat cheese

1 medium skinless finely chopped garden cucumber

2 teaspoons finely chopped fresh dill

Patties:

1(1/2)pound ground chuck

1/2 pound ground fresh bison

2 tablespoons finely chopped fresh flat-leaf parsley

2 garlic cloves finely chopped

1/4 cup Sutterhome Cabernet Sauvignon

1 egg

1(1/2) teaspoon kosher salt

1/2 teaspoon ground black pepper

1/2 teaspoon lemon pepper

Vegetable oil, for brushing the grill rack

4 grilled red bell peppers cut in 1/4 strips

6 slices of grilled pineapple

6(4&1/2inch) soft kaiserrolls, split

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or pre-heat on a gas grill medium-high.

To make the patties combine the chuck,bison,parsley,garlic,wine,egg,saltand pepper in a largebowl. Handling the meat as little as possible to avoid compacting it,mix well. Divide the mixture into 6 equal portions and form into patties to fit the rolls.

Brush the grill rack with oil. Place the patties on the rack, cover, and and grill until browned on the bottom 4 to 6 minutes. Turn the patties and continue grilling about 5 minutes.
Cut in (1/2) red pepper, remove the seeds, place on rack and grill until tender.
Remove the skin and cut into (1/4) inches strips.
Place on side of grilled slices of pineapple and grill until golden.
During the last few minutes of cooking place the rolls cut side down on the grill rack to toast lightly.

To assemble the burgers place the mountain goat cheese spread over the top and bottom of the rolls. Place 4 strips of red bell pepper on the bottom of the roll. Place the red bell pepper strips so they are half way in and out. Place the slice of pineapple, a patty and the roll tops. After assembling the red bell they should be visible. Serve and enjoy!!!!!
