Great Greek Burger

I have developed this recipe for my father, who loves hamburgers about as much as his ethnic greek cuisine. This for me was a difficult process, to incorporate both a great american hamburger, and the flavors of the mediteranean. I feel this recipie has a fusion like no other. Enjoy!!

1 1/2 pounds lean ground beef
1/2 to 3/4 pound ground lamb
1 egg
1/3 cup Sutter Home Cabernet Sauvignon
1/3 cup plain bread crumbs
1 tbsp dried oregeno
salt and pepper to taste
1 peeled sliced cucumber
2 fresh sliced tomatoes
1 sliced red onion
1 1/2 cups fresh spinich
1/3 cup sliced pitted Kalamata olives
1/3 pound feta cheese
1/2 cup Tzatziki sauce
6 seasame seed hamburger buns
2 tbsp extra virgin olive oil

1.Place ground meat in large bowl.Add egg, wine, bread crumbs, and oregeno. Mix well with hands. 2. Shape meat into thick, one third pound patties. 3. Grill the patties over grill, may also be cooked in a pan. 4. Meanwhile brush buns with olive oil 5. When burgers are cooked to the desired doneness, take off grill, salt and pepper, and allow to sit for a minute. At this time place buns on grill and lightly brown. 6. Finally the topings, Spread the tzatziki sauce on both sides of bun. On the bottom of the bun place spinich, cucumber, tomatoe, olives, and onion on top of tzatziki. Then place burger on bottom bun, top with feta cheese, and top bun.

I have found that the best way to place the toppings is on the bottom, so that they do not slide around, and wind up on your plate, but if there is a better way do it. Also very good on homemade pita bread. Please share with your friends
