Gourmet Greek Burger
Hearty yet healthy describes this gourmet burger. It strikes the perfect balance between these two, yet satifies all hamburger aficionados. The Mediterranean flavors come to life and compliment each other, in this all-American food. The ingredients are simple yet burst with flavor. A treat for the palate and the eyes.
1 pound lean ground beef or lamb
1/3 cup crumbled feta cheese
1/2 cup Kalamata olives, finely chopped
salt and ground black pepper to taste
1 tablespoon oregano
4 pita breads, the top fourth cut off
1 medium tomato, thinly sliced
1 small cucumber, chopped
1 small purple onion, thinly sliced
1 small cooked purple beet, chilled and thinly sliced
8 ounces nonfat plain yogurt
1 garlic clove, pressed and chopped
2 tablespoons fresh chopped mint
2 tablespoons chopped cucumber
Preheat a charcoal or gas grill. Mix together the ground meat, feta cheese, olives, and oregano. Season with salt and pepper. Shape into 4 oval patties and set aside. To prepare sauce, stir together the yogurt, garlic, mint, 2 tablespoons of cucumbers and set aside. Grill the burgers over hot grill approximately 5 to 7 minutes on each side, or until cooked through. To serve, place each cooked burger inside a pita pocket along with the tomatoes, cucumbers, beets, onions, and a dollop of yogurt sauce. Sprinkle with more oregano if desired.
This burger tastes as good as it looks. Items, such as the beets and cucumbers may be subsituted as desired. Shredded lettuce may be added if desired. A side of wedge fries finishes off this gourmet tasting burger.
