Gourmet Burger

I have a love for Cooking! I like to try new things. We are always having cooks out here on the weekends. We Mesquite grill almost everything.

Ingredients 

Patties:
1 pound ground Sirloin
1 pound ground chuck
1 small minced red onion
1/2 teaspoon Granulated Garlic
1 1/2 teaspoon All Purpose Greek Seasoning
1/2 teaspoon Black Pepper
2 teaspoons of Worcestershire Sauce
Avocado Mayonnaise:
6 Avocado's juice of one lemon
half of 1/4 teaspoon Kosher Salt
1/4 teaspoon Black Pepper
1/4 teaspoon Granulated Garlic
1/2 cup light mayo
Caramelized onions w/red bell peppers:
2 large 1015 onions
3 large red bell peppers
3 tablespoons Colavita Extra Virgin Olive Oil
2 tablespoons butter
half of 1/4 teaspoon Kosher Salt
1/4 teaspoon Black Pepper
Grilled Poblano's:
4 to 6 Poblano's grilled
1 to 2 tablespoons Colavita Extra Virgin Olive Oil
Vegetable oil, for brushing on the grill rack
Orowheat Onions Buns Split and Grilled
romaine lettuce
Baby Swiss Cheese
Provolone Chesse

Instructions 

Prepare a medium-hot fire with one medium Misquite log in a charcoal grill with a cover, or preheat a gas grill to medium-high with misquite chips. Cut up all your Veggs. (1015 onions and the red bell peppers are to be wedges) minced red onion for the beef and set aside until you need it for the beef patties. To make Caramelized onions w/red bell peppers. Combine onions, bell peppers, butter, and olive oil in a cast iron skillet. With the salt and pepper. Cook until Caramelized and tender. To make the patties, Combine beef, onion, garlic, greek Seasoning, pepper, wtih Lea & Perrins Worcestershire Sauce in a large bowl. Handling the meat as little as possible to avoid compacting it, mixing well. Divide the mixture into 6 equal portions and form the portions into patties just a little larger then the bun. Brush the grill rack with oil. Place the patties on the grill, with the whole Poblano's. Cover and grill until browned on the bottoms, 4 to 5 minutes. Turn the patties and continue grilling until done to preference. About another 7 minutes. The last 2 minutes add Baby swiss cheese and provolone chesse. Keeping an eye on the Poblano's. You want them black all over. Once black pull off and put in a small bowl with a plastic wrap. So they will steam, about 3 to 5 minutes. Then remove the outside skin and seeds. Grill the Buns over the fire on the rack to toast lightly. To assemble the burgers, place a generous amount of the Avocado Mayonnaise on the top bun. Adding the Caramelized onions, poblano to the top of the cheese. Place a lettuce leaf on patty. Add the top and serve. Makes 6 burgers
