Good Morning Burger

A simple twist on a breakfast classic...


6 slices of medium cut bacon
6 medium sized eggs
Hash browns
2 russet potatoes
1 tsp. salt
½ tsp. black pepper
3 tsp. unsalted butter
Vegetable oil
2 lbs ground chuck
2 tsp. salt
½ tsp. black pepper
2 tbsp. ketchup
2 tbsp. brown sugar
6 slices of cheddar cheese
6 large croissants, split
2 tsp. butter


Place cast iron skillet on the grill. Divide bacon into halves. Once the skillet is heated, place bacon in skillet and flip every 5 minutes until the bacon is cooked and crisp. Remove bacon from skillet and set aside until needed. Do not remove bacon grease. Fry the eggs in the same skillet, flipping only once about 1-2 minutes on each side, until the eggs are cooked over-easy. Grate the raw potatoes using the coarse holes on your grater. Mix in salt and pepper. Divide mixture into 6 equal portions and then form them into a pancake like shape. Place butter in skillet. Once butter has melted in with the bacon grease, add each patty into the skillet. Let cook about 5 minutes on each side until hash browns are golden and crispy. Remove skillet and potatoes from grill and set aside for later. Brush a light coating of vegetable oil directly on the grill rack. In a large mixing bowl, combine ground chuck, salt, pepper, ketchup and brown sugar and mix thoroughly. Divide the meat into 6 equal portions and form into patties. Place each burger on the grill and cover. Cook burger for 5 minutes on each side. When there are only 2 minutes left on side 2, place 1 slice of the cheddar cheese on top of each burger. Split the croissants and lightly spread with butter, then place them face down on the outer edges of the grill until toasted. Remove patties and croissants from the grill and set aside. On each croissant bottom, place a hash brown. Then top the hash brown with the hamburger pattie with cheese, a fried egg, and bacon. Place the croissant tops on and enjoy!
