george's southwester burger

The simplicity and ease of the burger in its most basic form, a patty of ground beef is certainly a bit jazzier. ground beef meets the challenge, becomin a terrific foundantion for a world of intriguing flavors. 1 can(7.oz) mexican corn
1 can(7.oz) black bean
1 can(7.oz) red bean
1/4 cup yellow onions finely chopped
1/2 teaspoon fresh garlic finely chopped
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon chile powder
1/2 teaspoon red crushed pepper salsa
1 tomato
2 tablespoons red onions finely chopped
2 tablespoons cilantro finely chopped
2 tablespoons jalapeno finely chopped
1/4 teaspoon fresh garlic finely chopped
1 teasspoon salt
1 1/2 pounds ground beef chuck (80% lean)
vegatable oil,for brushing on the grill rack.
1/3 cup softened butter
4 whole wheat bun
2 california avocados
1 tomato
1 red onion
1 head green leaf lettuce


prepare a medium-hot fire in a charcoal grill with a cover or preheat a gas grill to medium-high. to make the stuffing, in a midium bowl mix mexican corn,black bean,red bean,,onions,garlic,salt,cumin,chile powder and red crushed pepper. to make salsa, combine tomato,red onion,cilantro,jalapeno,garlic and salt in a blender. to make the patties,using 1/3 cup per patty,shape 8(3 1/2-inch) patties 1/2 inch thick, place 2 tablespoons packed stuffing in the center of 4 patties leaving a substantial border around it, place the second patty on top and tightly seal the edges of two patties together. place the burgers on the grill 4 to 6 inches from the medium coals, grill 8 to 10 minutes or until thoroughly cooked and no longer pink in the center, turning once. to assemble, 1/3 cup softened butter spread both sides of each bun, and grill until is golden toasted. on the botton bun place the patty, top with salsa,4 slices avocado,slice tomato,slice red onion and leave green leaf lettuce. add the top bun and serve makes 4 burgers For veggie lovers, replace the ground beef chuck for 1 cup bread crumbs, use the leftover stuffing,puree 1 cup mixed all toghether,make the patties,place on the grill until are lightly browned, to assemble, same as the ground beef chuck patties. makes 4 burgers
