Garden fresh NJ burgers with zucchini and carrot buttermilk slaw
I have lived in NJ all of my life. The ingredients in this burger remind me of summers in NJ. It contains jersey fresh corn, mushrooms, zucchini, and tomatos, all the wonderful fresh vegetables that are available during the summertime. The buttermilk dressing reminds me of the ice cold buttermilk at Hot Dog Johnny's. And the burgers are also a reminder of the many backyard cookouts with all of these wonderful fresh ingredients. One and a half pounds ground 85% lean beef
1 1/2 cup of corn kernels
1 cup of chopped fresh white mushrooms
1 cup chopped yellow onion
2 tablespoons of minced garlic
Half tablespoon of kosher salt
1 and a half tsp fresh ground black pepper
1 tablespoon of Worcestershire sauce
1 cup of match stick size green zucchini
1 cup shredded carrots
Three fourth of a cup of mayonnaise
1/3 cup fresh buttermilk
2 tablespoon chopped fresh chives
One quarter tsp of salt
Half of a tsp fresh ground black pepper
Half of a tsp garlic powder
One quarter tsp onion powder
1 tsp Dijon style mustard
6 slices of sandwich sized extra sharp yellow cheese.
6 medium sesame seed Kaiser rolls
6 lettuce leaves
6 slices of tomato
For the burgers: Mix the first 8 ingredients in order of their appearance, and then form into 6 patties. Let the patties rest, while you prepare the slaw.
For the slaw: Mix together the zucchini and carrot. In a seperate bowl, mix together the next 8 ingredients and pour the mixture over the zucchini and carrot mixture.Stir to blend ingredients completely and set aside.
Cook the burgers:Heat a gas grill with the lid closed until temperature reaches 400 degrees. Open the lid and spray the grittle with non-stick cooking spray. Cook the burgers approximately 6 to 7 minutes per side, or until cooked through. The last 30 seconds of cook time, add 1 cheddar cheese slice to each burger until slightly melted. Remove from the heat. Briefly toast the Kaiser rolls until lightly browned and remove from the heat.
Assemble the burgers:
Place 1 lettuce leave on the bottom half of each of the Kaiser roll,s and then 2 tablespoons of the slaw, a burger, a slice of tomato then the top half of the Kaiser roll, and serve. Makes 6 burgers.
I used fresh NJ sweet corn, and fresh mushrooms from Hammonton NJ as well as local tomatos.If fresh corn is not available then canned or frozen corn is ok. I also used pre-shredded carrots from the supermarket for easier preparation for the slaw. We also have the luxury of fresh buttermilk from the local farmers market, but store bought is ok too.
