Fully Loaded French Onion Burger

Ingredients:

Pickled Onions:1/4 cup Sutter Home Cabernet Sauvignon

1/4 cup red wine vinegar

1/2 cup water

2 T.kosher salt

1 T.sugar

1 t.Tabasco Sauce

1 large red onion,thinly sliced

Burgers:2 lb.ground chuck

1 t.salt

1/2 t.black pepper

1/4 t.red pepper(cayenne)

4 green onions,thinly sliced

1 cup “fully loaded”smashed potato chips

3/4 cup french onion sour cream dip

mayonnaise:1 large sweet onion,finely chopped

1 T.butter

2 cloves garlic,pressed

1 cup mayonnaise

1/4 t.salt

1/4 t.white pepper

6 slices good quality bacon

6 slices cheddar cheese

6 large slices tomatoes

3-4 cups mixed baby greens

6 good quality hamburg-style potato rolls,split,brushed with butter

Instructions:

1.To make pickled onions combine all ingredients in medium plastic or glass bowl,cover and set aside.

2.In large bowl combine all burger ingredients and shape into 6 patties.Make small indentation in top and cover and refrigerate.

3.To make mayonnaise on side burner of grill in large saute pan melt butter over medium heat.Saute chopped onion until softened and golden.During last few minutes add garlic.Let cool.To medium bowl add mayonnaise,cooked onion and garlic and salt and pepper.Mix well,cover and refrigerate.

4.Cook bacon in large skillet on side burner of grill until crisp.Drain on paper towel,place in foil and keep warm.

5.On grill that has been preheated to medium-high,rub wrack with oil or spray with non-stick cooking spray.Grill burgers 5 minutes on each side.During last few minutes,top burgers with cheddar cheese slices and place buttered split rolls around outside edge of grill to toast.

6.To assemble burgers,spread both sides of rolls with prepared mayonnaise,top with tomato slices,burger,bacon,greens,pickled onions and top of roll.
