Fresh Tomato & Basil Brschetta Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

2 lbs ground chicken breast
1/4 Cup Italian Dressing (Kraft, Zesty Italian)
2T Balsamic Vinegar
1t Salt
1/4 t pepper
6 thick slices of Fresh Mozzarella
3 Large ripe tomatoes, seeded & diced
1/2 med zucchini, coarsely chopped
1/4 cup snipped fresh basil leaves
2 t balsamic vinegar
1/2 t olive oil
1/4 t salt
1/8 t pepper
2 T grated fresh Parmesan Cheese
6 Focaccia Rolls
Olive Oil for brushing

 

Instructions

Preheat gas grill to medium-high heat.
Patties:
Combine ground meat, dressing, 2T vinegar, salt and pepper, mix until combine. Do not over mix. Make 6 equal patties, brush with olive oil & place on grill. Grill for 5-7 minutes on each side, turning only once. During last 2 minutes of grilling top each burger with a slice of cheese. Cut rolls, brush with olive oil & toast lightly. Remove all from grill when done.

Meanwhile, in a small bowl combine, tomatoes, zucchini, basil, garlic, vinegar, oil salt & pepper; mix gently. Distribute tomato mixture evenly over grilled burgers, sprinkle with parmesan cheese. Put on toasted top & serve immediately.
