For Your Eyes Only Burgers

My wife and I were driving on vacation and discussing the burger contest. We thought that you needed both a good burger and a catchy concept. My wife came up with the stuffed burger concept where you place half a burger in a pita to see the stuffing. This is how the name "for your eyes only" came about. My wife is Greek which is why we used the feta and Kalamata olives for the stuffing. We then worked on the recipe to enter the contest.


2.5 pounds ground chuck
1 egg white, lightly beaten
1 tablespoon Worcestershire Sauce
1 Teaspoon crushed oregano
1/2 Teaspoon Cavenders all purpose Greek seasoning
1/2 Teaspoon salt
1/2 Teaspoon pepper
2 Teaspoons minced garlic
1/4 cup finely chopped yellow onion
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped parsley
1/3 cup plain bread crumbs
8 ounces crumbled Feta cheese
1/2 cup finely chopped fresh tomato
12 pitted, chopped Kalamata olives
vegetable oil for brushing on grill rack
6 wheat pita breads, cut in half (2 pouches per burger)
chopped Romaine lettuce for six burgers
sliced cucumbers for six burgers


Preheat gas grill to medium-high.

To make the patties: Place the ground chuck, egg, Worcestershire sauce, oregano, Cavenders Greek seasoning, salt, pepper and minced garlic in large bowl. Measure chopped onion, chopped bell pepper and chopped parsley and then place in food processor to chop into finer pieces. Add to other ingredients in large bowl. Mix all ingredients by hand. Shape into 6 round balls and then split each ball into two pieces and form two flat patties from each ball (12 total patties which will be combined later into six stuffed patties).

To prepare the burger stuffing, mix the feta, tomatoes and Kalamata olives in a small bowl.

To stuff the burgers: Place two tablespoons of the burger stuffing on a patty and then place the other patty on top. Mold the edges of the patties together so the stuffing is inside the patty and you have a nice burger formed. Continue this process for each patty until you have all six stuffed burger patties complete.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook 5-7 minutes on each side, only turning once for medium cooked burgers. Turn the fire to low and then place the pita breads on the grill for one minute just to warm them up. To assemble the burgers, place the chopped romaine lettuce and sliced cucumbers in each of the pita pockets (each pocket is a half pita). Cut the burgers in half and place each half of the burger in a pita pocket so the inside of the burger can be seen. (This is why they are called “for your eyes only.”) Each serving consists of two pita halves with lettuce and cucumbers, with half a burger in each pita pocket, with the feta, cheese and Kalamata olive stuffing showing.


The burgers are easier to stuff and re-mold than you think and the final stuffed patty is a nice size burger. It is normal for the sides of the patty to open a bit during grilling and expose some of the stuffing.
