Filet American reflects the traditions of the Swiss, French and Belgians. the recipe is traditionally prepared and eaten uncooked; a mixture of capers, raw ground beef, egg and many seasonings. It is also found in Mexico and Russia with the addition of lime juice and vodka to help kill bacteria! In America, this dish is always grilled or cooked.
2 tbs chopped fresh parsley + 2 tbs chopped fresh basil + 2 cloves minced garlic + 3 tbs chopped yellow onion + 1/4 cup red wine + 1/2 cup bread crumbs + 2 tbs capers + 1/2 tsp salt + dash of pepper + dash of cayenne pepper (optional) + 2 lbs ground beef 80% lean + sliced tomatoes for garnish + 6 crusty rolls + Mixture for sauce + 4 oz shredded gruyere cheese + 3 oz shredded sharp cheddar cheese + 1/4 cup dry wine + 2 tbs Mayonnaise + 1 tsp corn starch+ 1/4 lb butter
Combine herbs, bread crumbs, red wine (reserve 2 tbs for roll spread) capers, salt and pepper and let stand for 20 min. to marinate. Pour white wine in a sauce pan adding cheese and mayonnaise. Stir while cheese melts and add corn starch for thickening. Add Ground beef to herb mixture and lightly mix being careful not to compact. Grill burgers 5 min on each side. Immediately before removing burgers brush the melted butter and reserved wine on the cut portion of the roll. Prepare Filet American on bottom roll covering meat portion with cheese sauce. Top with garnish and top roll.
Grilling time may vary. Cheese topping is a type of fondue but should be slightly thick to adhere well to burger.
