Fiesty Fiesta Burgers

Ingredients

Fiesty Mayo:
1/2 cup mayonnaise
1/4 cup Hot Mustard
Fiesta Salsa:
2 Avocados – pitted and diced
1 ear of fresh sweet corn
1 can black beans – drained
1/2 cup diced jicama
1/2 cup Sutter Home Zinfandel
Burgers:
2 lbs ground chuck
3T chopped fresh cilantro
3 cloves garlic – finely chopped
2T mayonnaise
2 chipolte peppers in adobo – chopped
1 package of Sazon seasoning
2t kosher salt
Grape seed oil, for brushing the grill
6 slices pepper jack cheese
6 Kaiser rolls, split

 

Instructions

Directions: Prepare the grill by preheating to medium-high heat. To make the fiesty mayo, combine the mayo and mustard in a small bowl. Mix well to combine. Cover the bowl and refrigerate until serving. To make the fiesta salad, cut the avocados in half, remove the pit and scoop out the flesh. Dice the flesh into small cubes and place in a small bowl. Remove the husks and silks from the ear of corn. Slice the kernels of corn off the husk into the small bowl. Open the can of black bean and gently drain. Add the diced jicama to the bowl with the avocado and corn. Add the Sutter Home Zinfandel and toss to combine. Cover the bowl and refrigerate until serving. To make the burgers, combine the ground chuck, cilantro, garlic, mayonnaise, chipotle peppers, sazon seasoning, and salt in a large bowl. Careful not to over handle the mixture, mix well to combine. Divide the mixture into 6 equal portions and form into patties. Carefully wipe the grill rack with the oil. Place burgers on the grill rack, cover and grill until bottom is seared but not burned, about 4-5 minutes. Turn burgers and continue grilling another 5 minutes for a medium burger or 6-7 minutes for a medium well done burger. Place a slice of pepper jack cheese each burger. Place sliced rolls on the coolest section of the grill to gently toast. Remove the rolls when golden brown. Turn off grill. To assemble the burgers, spread the toasted rolls with the fiesty mayo. Place the burger on the bottom half of the roll. Top the burger with a generous scoop of the fiesta salad. Cover with the roll top and serve. Makes 6 Fiesty Fiesta Burgers
