Feta Swiss Burgers with Smokey Bacon & Shallots

I have always loved to cook and enjoy making up new recipes. The first and only time I made these burgers they were a hit! Everyone said that the flavors blended well together and were the best burgers they ever had. I hope you enjoy them as much as we did! Clare, Fort Myers, Fl

2 pounds lean ground beef (25% fat)
2 large cloves garlic, minced
4 ounces crumbled Feta Cheese with Basil & Tomato
1 Tablespoon Seasoning Salt
1/4 teaspoon white pepper
1/2 teaspoon black pepper
1/4 cup Worcestershire sauce
2 eggs, beaten
1/4 cup dry bread crumbs
6 thick slices of Smokey Bacon (cut in half)
2 large Shallot bulbs (sliced)
6 Slices Aged Swiss Cheese
Olive oil
6 Kaiser Rolls split in half

1. Preheat grill on high heat. 2. In a large bowl, mix together the ground beef, garlic, Feta cheese, Spike seasoning, white pepper, black pepper, Worcestershire sauce, eggs, and bread crumbs. Form into 6 even balls then flatten to make patties. Refrigerate until ready to grill. 3. Place bacon in a heat resistant pan and cook on grill. Remove bacon when done and drain fat leaving 1 tablespoon. Add sliced shallots to the pan and cook until tender. Set bacon and shallots aside until burgers are grilled. 4. Brush oil on the grate then add burgers. Cover grill and cook for 5 minutes per side, or until done. Add 1 slice of swiss cheese to each burger. 5. Lightly brush olive oil on inside of each sliced Kaiser roll. Place on grill and remove when toasted. When cheese is melted, place burger on bun, top with shallots, bacon and ketchup.

I had my butcher mix ground beef and ground round together. Make sure you have 25% fat which makes all the difference! When forming patties I push the Feta Cheese inside so it does not show. This prevents it from melting on the grill and keeps all the flavor. You could probably get 8 burgers out of this recipe as they do not shrink.
