Feta Stuffed Spicy Greek Burgers

Ingredients

Spicy Greek Seasoning:
¼ c red wine vinegar
¼ small, fresh onion
1 clove garlic, peeled
2 tsp salt
1 tsp pepper
1 tsp oregano
2 pepperoncini, stems removed
Patties:
2 pounds ground round
Spicy Greek Seasoning
6 slices Feta cheese
Vegetable oil, for brushing on the grill rack
6 kaiser rolls
¼ c olive oil spread
12 slices tomato
24 bell pepper strips
12 Kalamata olives, seeded and sliced
4 slices sweet onion, separated into rings

 

Instructions

To make the Spicy Greek Seasoning, add all ingredients to a small food processor and blend until smooth. Cover and let mixture rest for one hour. Prepare a medium-hot fire in a charcoal grill with a cover. To make the patties, mix the ground round with Spicy Greek Seasoning. Separate into 6 equal portions. For each patty, pat the meat out into a thin circle. Place one slice of feta cheese in the center, and wrap the meat around the cheese, completely sealing all openings. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack and cook for 5-7 minutes on each side. Remove patties from the grill and stack to keep warm. Spread the insides of the rolls with the olive oil spread. Place rolls, cut side down, on the grill and toast until lightly browned. To assemble the burgers, place the burger on the heel of the roll and top with 2 tomato slices, 4 bell pepper strips, and equal portions of kalamata olive slices and onion rings. Add the bread tops and serve. Makes 6 burgers.
