Feta Stuffed Gyro Burger

This burger is bursting with flavor, simple to make, and tastes just like a delicious gyro!

1 cup Tzatziki Sauce (recipe follows)
3 lbs. ground lamb
3tbs. fresh chopped mint
3tbs. fresh chopped oregano
Salt Pepper
2tbs. olive oil
¾ cup feta crumbles
6tbs. chopped kalamata olives
6 large hamburger buns (preferably freshly baked from grocer)
½ stick softened butter
6 romaine leaves
4 roma tomatoes, sliced thin
½ red onion, sliced thin
Tzatziki Sauce
1 cup plain yogurt
½ cup diced ‘hothouse’ cucumber
3 garlic cloves, finely chopped
1tsp. salt
1tsp. pepper
2tbs. freshly squeezed lemon juice
1tbs. olive oil

To make the Tzatziki sauce, combine all the ingredients in a bowl and refrigerate until ready to use. To make the lamb burgers, combine the meat, herbs, salt and pepper to taste, and olive oil until all ingredients are incorporated. Divide into 6 balls, and then divide those in half. Make thin patties. Place 1 tbs. feta and ½ tbs. olives on 6 of the patties. Next, place another plain patty on top of each, to form 6 stuffed patties. Make sure to seal the edges of the patties so that no filling is showing, and they will keep their shape during grilling. Turn grill to medium/high and let it heat up for about 5-10 minutes. Grill burgers over direct heat for about 5-7 minutes on each side. While the burgers are cooking, butter both the top and bottom buns, and place on grill just before burgers are done, until they get golden brown. Place the burger on the bun and top with red onion, a couple tomato slice, a piece of romaine lettuce, and spoon on Tzatziki sauce. Top with bun and enjoy!

Try to keep the patties flat and fairly thin...otherwise they become difficult to eat!
