Double Your Fun “Pitza” Burgers

Ingredients

TOMATO TOPPING
3 ripe Roma tomatoes, finely chopped
4 cloves garlic, finely chopped (reserve half for burgers)
1/4 cup finely chopped basil
1 teaspoon extra virgin olive oil
salt
fresh ground pepper and red pepper flakes to taste
MUSHROOM TOPPING
1 tablespoon extra virgin olive oil
1/2 medium white onion, finely chopped (reserve half for burger mix)
8 ounces sliced cremini mushrooms
splash of Sutter Home Merlot
1/4 cup finely chopped Italian parsley
salt & pepper
"PITZA" BURGERS
1 pound bulk Italian sausage
1/2 ground pork
1 cup bread crumbs
reserved chopped onion
reserved chopped garlic
1/2 cup Sutter Home Merlot
1/2 cup prepared pizza sauce
8 ounces Mozzarella (regular, not fresh) cut into six slices.
6 pita breads, split.
1/2 cup prepared pizza sauce
Romaine lettuce leaves (optional)

 

Instructions

TOMATO TOPPING Combine ingredients in bowl and set aside till burgers are cooked. MUSHROOM TOPPING Heat olive oil in skillet to medium. Add garlic, stir for a few minutes being careful not to burn. Add mushrooms, parsley and wine. Saute until soft and wine is absorbed. Season to taste and set aside till burgers are cooked. "PITZA" BURGERS Combine sausage and ground pork with bread crumbs, chopped onion, garlic, piza sauce & wine. Form into six patties about the size of the pita rounds, using a spoon to create a depression on top of patties to hold the toppings. Grill until crusty & brown on one side, flip patties & place slice of Mozzarella on each. Cook until burger is cooked through and cheese melts. Meanwhile, brush inside of pita rounds with olive oil and lightly toast on grill. Place burger on one half of split pita bread, spoon on choice of toppings (or both!). Add romaine, if desired and top with other pita half. Mangia!
