Don’t Cry For Me Onion Burgers with Spicy Caramelized Onions

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

Burger Patties
1 pound ground chuck
1 pound ground sirloin
2 tablespoons Zinfandel
¼ cup green onions (scallions) top and bottom
1 cup canned crushed French fried onions
1/3 cup minced sweet onion
1 tablespoon chopped fresh parsley
1 tablespoon grey poupon mustard
1/2 tsp. hot salt
1/2 tsp. pepper
Spicy Caramelized Onions
1 large sweet onion, halved and thinly sliced
1 tablespoon hot pepper sauce
1 tablespoon beef broth
1 tablespoon balsamic vinegar
1 tablespoon garlic infused olive oil
1 tablespoon dark brown sugar
6 slices of baby Alpine Lace Swiss cheese
Olive Oil, for brushing on the grill rack
1 bunch of Arugula lettuce
6 Onion Buns

 

Instructions

Prepare a medium-hot fire in a charcoal grill with cover, or preheat a gas grill to medium-high. To make the spicy caramelized onions, combine the onion, pepper sauce, broth, vinegar, olive oil and brown sugar in a 10 inch nonstick, fire proof skillet, cover with a lid, and place on the grill rack. Cook the onions for 15-20 minutes, stirring occasionally and until the onions are caramelized and most of the liquid is evaporated. Remove the pan from the grill, cover and set aside. To make the burger patties, combine the chuck, sirloin, Zinfandel, green onions, crushed French fried onions, onion, parsley, mustard. salt and pepper in a large bowl. Mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit your rolls. When the grill is ready, brush the grill with the olive oil. Place the burger patties on the rack, cover and cook, turning once, until done to preference, 7-9 minutes on each side for medium. During final minutes of grilling, add Swiss cheese to burgers until melted. When cheese is melted remove burger patties from grill set aside for a moment. Place split onion buns, cut side down, on the outer edge of the grill rack to toast lightly. To assemble the burgers, place on each bottom of the bun equal parts of the Arugula lettuce, an equal portion of the caramelized onions a burger patty, add the roll top and serve.
