Ingredients

1.5 lbs. ground beef
2 Tbsp. Worcestershire sauce
2 Tbsp. Steak Seasoning
2 Tbsp. soy sauce
1 Tbsp. Hungarian paprika
1 package Boursin Garlic and Herb Cheese
10 key limes
1.5 tsp. honey
1 Tbsp. chopped fresh Cilantro
1/2 tsp. Salt
1 grind of Pepper
1 canned jalapeno
1 large tomato
1 red onion
1 avocado
Vegetable oil for grill
6 soft Kaiser rolls

Instructions

In a large bowl, mix together the beef, Worcestershire sauce, Steak Seasoning, soy sauce, and paprika by hand. Mix just until incorporated, but do not over-mix. Form into six patties. Push a small indentation into the center of each patty with your thumb – this will prevent the burgers from swelling too much as they cook. Remove Boursin Cheese from the packaging and place in a bowl to come to room temperature. Add the zest of 3 key limes to the cheese, and then juice all 10 limes into a small saucier. Place over high heat on a gas grill’s burner or directly on top of grill grating, and reduce liquid by two thirds. Cool, and add to cheese. Also add honey, cilantro, salt and pepper to cheese mixture. Mince the jalapeno into a paste and add to cheese. Mix together with a spoon until well blended. Slice tomato into 1/4-inch thick slices. Slice onion into 1/4-inch thick slices and pierce with toothpicks for grilling. Slice avocado into 1/8-inch slices. Prepare grill by wiping down rack with vegetable oil on a towel. Turn grill to high heat. Place burger patties on grill, indention side up, and cook for 3 minutes. Flip and cook for another 3 minutes. The burgers should be medium to medium rare. Remove burgers and allow to rest. While they rest, grill the slices of onions on each side for 2 minutes. With your fingers, remove some of the excess bread inside the rolls (to make more room for the burger!) and toast the rolls on the grill. To assemble, place burger on bottom of bun, add 2 slices of avocado, a few grilled onions, and tomato. Smear cheese mixture on top bun and cap burger.
