Cuban Burger


2 pounds 80/20 ground chuck
1 tablespoon Ancho chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon chopped garlic
1 ounce light brown sugar
1 teaspoon instant coffee granules
1 teaspoon Worcestershire sauce
6 each Rolls
1 cup green peppers, sliced
1 cup red bell pepper, sliced
1 cup yellow bell pepper, sliced
6 Portabella Mushrooms
6 ounces Rum ( preferred Club House Real Cuban Rum or a dark rum )
6 slices cheddar cheese
1 pint Cuban ColeSlaw ( see recipe )
6 each 3 ounces of Tabacco Onion Rings ( see recipe )


mix first 10 ingredients together.
Form into 8 pattys.
Grill 5 minutes on each side.
Soak mushrooms in rum.
Grill mushrooms, then slice and set aside
add cheese.
grill bun.
To Assemble:
Starting on the bottom - burger, mayo, peppers & mushrooms, tobacco onions, col;e slaw.


Cuban Cole Slaw
1 head Cabbage- green, shreaded
1 each red onion, thinly sliced
1 cup white vinegar
1 cup cane sugar ( fine grind )
1 tablespoon salt
1 tablespoon white pepper
6 each carrot, julienned
2 cups mayonnaise
1 tablespoon powered garlic
2 cups jamaica, julienned
1 tablespoon lime juice

Shred cabbage fine.
In a large bowl:
Add every thing else. Mix well.

Tabacco Onion Rings
3 each large sweet onions, thinly sliced
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon paprika
8 cups cannola or peanut oil
1 quart buttermilk
1. In a large bowl:
combine flour, salt, peppers, paprika
In a bowl:
add buttermilk, soak onion rings ( at least 15 mins. )
Heat oil to 350 degrees
2. Shake excess milk from rings,
dredge in flour mixture, shake excess
fry for about 8 minutes or until golden brown
Drain on paper towel.
