Classic Old-fashioned Southern Meat Loaf & Tater Burgers

Ingredients

1 cup Tomato Juice
1/2 cup Minute Oats
1/4 cup instant mashed potato flakes
1/4 cup grated onions (about one medium-large onion)
2 tsp salt
3/4 tsp sage
1 tsp garlic powder
1/4 tsp black pepper
2 eggs, beaten
1 1/2 lbs. ground beef

Topping
1 lb. fatty bacon
1 large onion, thinly sliced
1 large portabello mushroom, diced

Sauce:
3 Tbsp. brown sugar
1/4 cup Ketchup
1/4 tsp. nutmeg
1 tsp mustard

6 Hamburger buns

 

Instructions

In a large bowl, place the tomato juice, oats, potato flakes, grated onions and add the salt/sage/garlic/pepper.
Stir to blend.

Add the 2 beaten eggs, blending well.

Add the ground beef and stir with a wooden spoon, blending ground beef into the tomato mixture, until all liquid has been absorbed.

Form into 6 large burgers. Place each burger on a sheet of tinfoil, folding across and turning ends under. Place the burger around the outside edge of a medium hot grill for 15 min. turning twice.

Remove burgers from grill and allow to sit for 5 min. Remove foil, and place each burger over a hot grill about 4 to 5 min. per side to achieve grill marks and brown well.

While burgers are cooking, fry bacon in a cast iron skillet on the grill. Remove bacon when done with a slotted spoon. Place on paper toweling to drain.

Place onions and mushrooms in the fat from the bacon. Stir and cook approximately 10 min. until both are wilted and tender.

Place burgers on individual hamburger buns, toasted or not according to individual preference. Spoon onion/mushroom mixture on top of hamburger, place two slices of bacon over each burger. Top with sauce if desired and bun top.

Sauce:
Place all sauce ingredients into a small pan over high heat on the grill.

Bring ingredients to a boil and cook stirring frequently for 3 min.
Serve over hamburgers.
