Classic BBQ Glazed Burger with BBQ slaw on Texas Toast

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Nothing says Summer in Texas like BBQ, butat today’s hectic pace not everyone has time for the low and slow cooking of brisket and ribs. This recipe incorporates all the flavor of BBQ without the long wait. My original classic brisket sauce included bourbon and coke, but I found the Sutter Home White Merlot to be a wonderful change of pace in the sauce. I even tossed some of the sauce into cabbage slaw mix to add crunch factor to this burger. I hope you enjoy these flavors as much as my family and friends have!

Ingredients:

BBQ Spice Blend

11/2tsp- sweet paprika

11/2tsp.- smoked paprika

11/2tsp.-smoked sea salt

3/4tsp.- reg. sea salt

11/2 tsp.-ancho chile powder

3/4tsp.- garlic powder

3/4tsp.-onion powder

1/2 tsp.- black pepper

1/2 tsp.- cayenne pepper

3/4 tsp.- ground cumin

Burgers

21/2 lbs. ground angus beef

21/2Tbsp- BBQ Spice blend

BBQ Sauce glaze

11/2 cups light brown sugar

11/2 Tbsp- BBQ Spice blend

1/2 cup- Sutter Home White Merlot

1/2 cup- cola

BBQ Slaw

1 – 8oz pkg. coleslaw mix

1/2 cup- bbq sauce glaze

vegetable oil for brushing the grill

12 strips-thick cut applewood smoked bacon

12 oz. – smoked cheddar, grated

12 slices- Texas Toast

Instructions:

Prepare charcoal grill with cover or pre-heat a gall grill to medium high.

Place spices in a medium sized bowl,mix with a spoon until well-blended.Place ground beef in a large mixing bowl. Sprinkle 21/2 tbsp of the spice blend into the meat mixing by hand as you go. cover meat and set aside until ready to shape & cook patties.

Place brown sugar ,remaining spice blend, wine & cola into a heavy fire proof 2 qt sauce pan.Stir until sugar is dissolved Place pan on grill let sauce simmer for 20-30 minutes or until volume is reduced by 1/3. after sauce has reduced remove.it from the grill. Place coleslaw mix into a medium bowl After sauce has cooled for 10 minutes, pour 1/2 cup of the sauce over the mix and toss to coat. refrigerate until ready to assemble the burgers.

Brush the grill with oil to keep bacon and burgers from sticking. Cut bacon strips in half crosswise before placing them on the grill. after turning bacon once, begin basting the strips with the glaze. continue to turn and baste until bacon is done but not crispy or crunchy. Remove to a plate until ready to put on the burgers.

Shape meat into large patties to fit the Texas Toast. Place patties on grill.After 11/2-2 minutes turn patties.

baste the top of patties with BBQ sauce. Continue turning and basting process 3 more times. Place grated cheese on burgers and allow to melt, then remove patties, tent to keep warm while the browning Texas Toast.

Place slices on the grill turn when golden brown remove when second side is also golden brown.

To assemble the burgers, brush one side of toast with sauce. Place burger on one slice of toast top with four bacon “halves”. pile on the BBQ slaw, then place on second slice of toast. sit back with your favorite beer or better yet a glass of Sutter Home white Merlot!
