Ingredients

Ingredients:
Hamburger
1. 2 1/2 lb of ground beef (50% chuck 50% sirloin) 15 – 20% fat 2. 2 medium onions, grated
3. 5 garlic cloves, minced
4. 5 tsp of smoked Hungarian paprika 5. 2 1/2 tsp dried marjoram 6. 2 1/2 tsp caraway seed, coarse ground fine in coffee grinder
7. 2 1/2 tsp black pepper, fresh ground course in coffee grinder
8. 2/12 tsp sea salt, fresh ground fine course in coffee grinder Topping
9. 12 pieces of pepper-coated country bacon, (grilled crisp while meat is resting)
10. 1 large Vidalia onion, thin sliced (sliced while meat is resting) Bun
11. 6 Bakery Kaiser roll, fresh baked, sliced and toasted on grill (toasted while meat is resting)
Homemade Condiment –
Hungarian Spiced Cheese (made during meat resting period) mix all ingredients
12. 1 cup whole milk small curd cottage cheese, (lightly drained, reserve liquid, add as needed to get mustard like consistency of spread)
13. 2 tsp smoked Hungarian paprika
14. 1 tsp caraway seeds, cracked by quickly placing in coffee grinder for few seconds
15. 1 tsp capers, mashed
16. ½ tsp mustard dry Grill
17. Oil for grill

 

Instructions

Hamburger cooking directions:
Hand-mix all hamburger ingredients (this can take up to 30 minutes) and let meat rest for one hour.
Make the Hungarian Spiced Cheese condiment while the meat is resting. During last 20 minutes of meat resting period pre-heat grill, approx 15 minutes, toast bun meat side on grill, watch buns closely for burning, and set aside. Separate into 6 equal portions and mold each portion into a firm patty, approx 1/2 to 3/4 inch thick. Grill hamburger on high heat to sear and crisp outside, then move to medium heat and cook to each individual preference. My preference is medium well, approx. 4-5 minutes per side on medium, with lid closed. Spread Hungarian Spiced Cheese on toasted side of bottom bun and top bun and place on buns for 30 seconds on warming grill (upper grill, if grill is equipped or on low heat grill area if not) and close lid. Watch carefully for burning. Place hamburger on bottom of bun, put one slice of onion on top of hamburger, place top bun on hamburger and enjoy. Estimated preparation time: Preparation and mixing of hamburger – 30 + – minutes Meat resting – 1 hour (cook bacon and make spice cheese during this time) Grill pre-heat – 15 minutes Grilling – approx 15 minutes Hamburger build – 5 minutes Total time estimate – 2 hours
