Chocolate Chipotle Burger

Ingredients

1 cup sour cream
2 tablespoons taco seasoning mix
1 clove minced garlic
1 1/2 teaspoons chipotle chili powder
1 -16 ounce bag of coleslaw mix
1/2 cup sliced green onions
1/2 cup chopped cilantro leaves
1 large diced tomato
3 tablespoons fresh lime juice
2 pounds ground chuck
1 tablespoon unsweetened cocoa
1 tablespoon regular chili powder
3 tablespoons Colavita Extra Virgin Olive Oil
6 Kaiser rolls, split
6 slices Colby cheese
6 slice Monterey Jack cheese
vegetable oil for grill

 

Instructions

Preheat gas grill to medium high-heat.

Combine first four ingredients (through chipotle chili powder) in a small bowl. In a large bowl combine coleslaw mix, green onion, cilantro, tomato and lime juice. Toss lightly to blend.

Prepare beef patties: Place ground chuck in large mixing bowl and knead in cocoa powder and regular chili powder. Form into six -1/3 pound burgers and set aside. Lightly brush Kaiser roll halves with olive oil. Check grill temperature. Lightly brush grill with vegetable oil. Place beef patties in the center of grill and cook about four to five minutes. Turn carefully with metal spatula. Cook for another four minutes (or until desired degree of doneness). Once patties are almost done, place Kaiser rolls, split side down along grill edge. Grill for about three minutes, checking often. Remove buns and burgers from grill. Top each burger with one slice of Colby cheese and one slice of Monterey jack cheese.

To assemble burgers: on bottom bun spread one tablespoon sour cream mixture followed by two to three tablespoons coleslaw mixture. Place burger patty on top of coleslaw and spread another tablespoon sour cream mixture on top bun and place on top of burger patty.
