Chocolate Chili Burgers with Spicy Mayonaisse

Ingredients

-2 pounds of cold, lean ground beef
-1 and 1/2 Tablespoons chili powder
-1/2 teaspoon cinnamon
-1 Tablespoon brown sugar
-1 ounce of grated unsweetened, baking chocolate
-1/4 pound of crumbled sharp cheddar cheese
-1 teaspoon of salt
-2 teaspoon of freshly ground black pepper
-1 Tablespoons minced garlic
-14 Tablespoons of Dark Beer 
-Olive oil for brushing
-1 Vidalia onion, sliced
-Piece of aluminum foil
-1/2 cup mayonaisse
-1 Tablespoon Tabasco sauce
-6 Kaiser Rolls, sliced in half
-Shredded lettuce
-Sliced tomato

 

Instructions

FOR THE BURGERS: In a large bowl, combine the ground beef, chili powder, cinnamon, minced garlic, brown sugar, unsweetened chocolate, 1/2 teaspoon of salt, 1 teaspoon of freshly ground black pepper, 10 Tablespoons beer, and the cheddar cheese. Divide the mixture into 6 equal parts and form into patties, making sure the cheese does not show. Place the patties in the refrigerator for 15 minutes. FOR THE ONIONS: While the patties are in the refrigerator, place the sliced Vidalia onions in the center of the aluminum foil. Sprinkle them with 1/2 teaspoon of salt, 1 teaspoon of freshly ground black pepper, and 4 Tablespoons of beer, making sure all the onions are evenly coated with beer. Roll the aluminum foil closed, creating a sealed pouch. Set aside until they are ready for the grill. After the patties have been in the refrigerator for 15 minutes, remove the patties from the refrigerator and let rest for 5 minutes. Brush both sides of the patties with olive oil. Place the prepared onion pouch and the patties on the grill, on medium high heat, for 6 minutes with the lid closed. After 6 minutes, turn the patties and move the onions to medium low heat, and allow them to cook for 6 additional minutes with the lid closed. Remove the patties and the onion pouch from the grill and allow them to rest for 5 minutes. SPICY MAYONAISSE: In a small bowl, combine the mayonaisse and tabasco sauce and set aside for assembly. ASSEMBLY: Place a patty on the bottom half of the kaiser rolls. Evenly distribute the grilled onions, sliced tomato, and shredded lettuce on all six patties. Spread the spicy mayonaisse on the top half of the kaiser roll, making sure each burger gets the same amount, place it on top of the hamburger and enjoy. Makes 6 hamburgers.
