Chipotle Tex-Mexi Melt Turkey Burgers with Pico de Gallo

Ingredients

Pico de Gallo:
6 roma tomatoes, finely diced
1/2 cup red onion, minced
1 jalapeno, seeded and minced
1/3 cup cilantro, finely chopped
juice of 1 lime
1 1/2 teaspoon salt
Chipotle Base:
6 chipotle chilies in adobo,coarsely chopped
4 cloves garlic, chopped
2 tablespoons ground cumin
juice of 1 lime
2 teaspoons salt
Patties:
2 pounds lean ground turkey
1/2 cup black beans
1/2 cup corn
1/2 cup red onion, diced
Chipotle Pico Sauce:
2 tablespoons of reserved chipotle paste
3/4 cup pico de gallo
6 tortilla bread buns
2 cups Kraft 4 Blend Mexican Cheese
1 cup tortilla chips, crushed
3 cups head lettuce, shredded

 

Instructions

Preheat a gas grill to medium-high. To make the pico de gallo, combine the tomatoes, red onion, jalapeno, cilantro, lime juice, and salt in a bowl. Mix well and refrigerate at least 1 hour, stirring every 15 minutes. To make the chipotle base, combine the chipotle chilies, garlic, cumin, lime juice, and salt in a small food processor. Reserve and refrigerate 2 tablespoons of the base. Set the remainder aside. To make the patties, combine the turkey, black beans, corn, red onion and chipotle base, mixing well, but taking care not to overwork the meat. Divide the meat mixture into 6 equal portions on a plate. Refrigerate until ready to grill. To make the chipotle pico sauce, combine pico de gallo after chilling for an hour with reserved chipotle base in a small food processor. Set aside. Brush the grill rack with oil. Place patties on the rack, cover and grill for 3 to 4 minutes. Turn patties 90 degrees to create hash marks. Cover and grill for 3 to 4 minutes. Flip burgers, cover and grill for 3 to 4 minutes. At this time, place tortilla bread cut side down on one side of the grill. Turn patties 90 degrees, cover and grill 3 to 4 minutes. Flip burgers on last time, cover with equal portions of cheese and close the grill. Remove patties when cheese melts and remove bread when adequately toasted. To assemble the burgers, place the bottom tortilla bread buns on plates and add equal portions of crushed tortilla chips. Cover with equal portions of pico de gallo and then place the burger patties on top. Top with equal portions of lettuce, spread the top tortilla buns with the chipotle pico sauce and serve.
