Chipolte Bourbon Burger

Hi These burgers were created for a friend of mine who loves chipolte peppers. Hope everyone enjoys the burgers

Ingredients 

2 lbs ground chuck (80/20)
3 medium or 4 small chipolte peppers (chopped)
1/2 medium vidalia or other sweet onion (diced)
1 jigger bourbon
salt and pepper (to taste)
8 slices colby jack cheese
4 ciabbatta or kaiser rolls
salsa

Instructions 

Combine first 5 ingredients in large bowl Form 4 burger patties Grill to desired doneness Top each burger with 2 slices of colby jack cheese Serve on rolls with your favorite salsa

Comments 

If forming the burgers a few hours ahead of the time when they will be grilled, omit the salt until just before cooking.
