I created this burger for some visiting friends who love to travel. It is meaty with a flavorful twist. It is also quick and easy to prepare which gives me more time to enjoy my friends' interesting travel stories.
3/4 pound grape tomatoes, cut in half
2 medium sweet onions, sliced into 1/4-inch slivers
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1.5 lbs ground beef chuck (85/15 mix)
2 tablespoons chili powder
1 tablespoon brown sugar
2 tablespoons fresh lime juice
1 large garlic clove, crushed
6 small baguettes
Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). When it is hot, oil the grates of the grill.
1. In a medium bowl, combine tomatoes, onions, salt, pepper to create the relish. Set aside.
2. Divide meat and form 6 equal burgers.
3: In a medium size bowl, mix chili powder, brown sugar, salt, lime juice and garlic. Press one burger into the bowl with seasoning; turn to season both sides. Repeat for all burgers.
4. Cook the burgers for 4 to 5 minutes; Turn and cook additional 4 to 5 minutes more or until done.
5. Transfer burgers to baguettes. Top with the tomato-onion relish and serve immediately.
In this recipe, the meat is crusted with seasonings, not mixed, to lock in juices and prevent over handling.
The relish topping is juicy and crunchy but not overwhelming.
