Chile Pinon Burger
When most people think of New Mexico, they envision red chiles. What a lot of people don
2 pounds of ground sirloin
1 Tablespoon of Weber Chicago Steak Seasoning
2 small cans or 1 large can of whole green chile*
1 teaspoon of garlic salt
1/4 cup pinon pine or Pignolia nuts**
1 Tablespoon of olive oil
3 strips of bacon, cut in half
2 cloves of garlic, minced
1 Tablespoon of all-purpose flour
2 cloves of garlic
1 Tablespoon of whole oregano***
1 carton (14 oz)of frozen red chile sauce, thawed****
1 beef bouillon cube or 1/4 t "Better than Bouillon"
1/4 cup red wine
6 whole wheat hamburger buns
1) In a large bowl, mix sirloin with tablespoon of steak seasoning. Don
* Fresh chile can be used instead. Canned versions can be found in most grocery stores and include Hatch, Bueno and Chimayo.
**Pinon Pine nuts are hard to find but Pignolia nuts can usually be found at grocery stores or Wherehouse stores.
***Mexican Oregano is a good choice.
****Red chile comes in Mild, Medium or Hot. This recipe is Mild to let the flavors come through rather than just heat.
