Chile con Queso Burger

In the land of Tex-Mex, chile con queso is served with corn chips while you wait for the enchiladas to be served. The flavor of the cheese and jalapenos also enhance burgers. The recipe is simple, but then, so is Tex-Mex.

2 lbs. of Black Angus hamburger
2 tbs. seasalt
2 tbs. black pepper
1 clove fresh garlic (chopped fine)
2 ozs. garlic salt
16 slices of American cheese
32 rings of sliced pickled jalapeno
8 large sesame seed hamburger buns
8 ozs. mayonnaise
8 leaves of iceberg lettuce
2 large tomatoes sliced
2 large sweet onions sliced

Build a charcoal fire allowing for high heat and brush grill with oil to avoid sticking. Add salt, pepper, and garlic to beef and pat into eight patties. Cook meat patties for 5-8 minutes, medium-well, and while cooking, sprinkle garlic salt on coals. Just before taking up the patties, add two slices of cheese to each patty, along with four pepper rings, on the cheese. Cover grill to melt cheese. Place patties around edge of grill to keep warm. Place fireproof griddle on fire and fry the cut side of buns in juice from patties. Apply mayonnaise to buns. Add lettuce, tomatoes, and onions to burgers and serve.
