Chicken Chenin Blanc Burgers with Sauted Crimini Mushrooms & Green Onions in Chenin Blanc Sauce

I came up with this recipe while mimicking a recipe for Chicken Marsala. The patties were tender and juicy and the Chenin Blanc gave it an exceptional flavor.

Ingredients 

Sauted Crimini Mushrooms & Green Onions in Chenin Blanc Sauce
1 Tablespoon butter
1 cup sliced Crimini mushrooms
1/4 cup chopped green onions (tops included)
1/2 cup chicken broth
1/2 cup Sutter Home Chenin Blanc wine
2 Tablespoons cornstarch
Patties
3 Tablespoons chopped crimini mushrooms
3 Tablespoons chopped green onions (tops included)
1 Tablespoon fresh minced garlic
1 1/2 Teaspoon salt
1/2 teaspoon fresh ground black pepper
2 Tablespoons chicken broth
2 Tablespoons Chenin Blanc Wine
2 pounds fresh ground chicken breast
Vegetable oil for hands and grill
6 Portuguese rolls (cut in half)
Melted butter for brushing on rolls

Instructions 

Prepare a medium-hot fire in a charcoal grill with cover or preheat a gas grill to medium high. To make sauce: combine butter, mushrooms, green onions in small heavy fire proof saucepan. Saute on grill rack until mushrooms and onions are tender. In small mixing bowl combine chicken broth, Sutter Home Chenin Blanc and cornstarch. Add to mushrooms and onions stir mixture until it boils and thickens about 3 minutes. Set sauce to side of grill to keep warm. To make patties:in large mixing bowl combine mushrooms,onions,garlic,salt,black pepper,chicken broth and chenin blanc whisk to blend well. Coating hands with oil blend in ground chicken breast. Divide mixture into 6 equal portions and form into patties to fit bun. When grill is ready brush grill rack with vegetable oil. Place patties on rack cover and cook 4 to 6 minutes. Turn patties and cook additional 4 to 6 minutes, until internal temperature reaches 165 degrees. During last few minutes of cooking brush the cut side of rolls with melted butter and place cut side down on outer edges of rack to toast lightly. To assemble the burgers place one patty on each roll bottom. Top each patty with equal portions of Sauce add roll top and serve. Makes 6 servings.
