Chicken & Goat Cheese Burger w/Barbecue Mango Lime Salsa

Ingredients 

1 tbsp Olive oil, plus a little extra for drizzling
1 onion, chopped
1 fresh garlic clove, chopped
1 tsp ground cumin
1 tsp fresh ginger root, chopped
2 tsp fresh Chillies, chopped
2lbs minced Chicken breast
1 tsp chopped Coriander
1 egg 1 cup breadcrumbs
salt and pepper
1/2 cup flour
1 pound goat’s cheese
1 Tsp Olive oil
Mango Lime sauce Ingredients
3 ripe mangoes, cut into chunks
juice of 1 lime
1/4 cup Butter, softened

Instructions 

Mango Lime salsa 1.Brush the hot grill rack with vegetable oil before skewer to help keep them from sticking. 2. Thread about 5 chunks of mango onto each bamboo skewer. Place them onto a hot barbecue. 3. Mix together the lime juice and butter until thoroughly blended. 4. Brush the mango generously with the lime butter mixture. Turn and brush the other side. 5. Cook until the mango is browned on all sides 6. Remove from skewers and a chop up coursely and set aside ---------------------------------------- Chicken Recipe: 1. Heat the olive oil and sweat the onion, garlic, cumin, ginger and chillies together until softened in a frying pan on the grill. 2. Stir into the minced chicken and add the chopped coriander, egg, breadcrumbs and salt and pepper. 3. Flour a chopping board and shape the mixture into four balls. Insert a slice of goat’s cheese in the centre of each and shape into a burger. Refrigerate until needed. 4. Brush the hot grill rack with vegetable oil before adding patties to help keep them from sticking. 5. Place burgers on grill until cooked through 5 minutes on each side or until liquids run clear from burger, set burgers aside on the edge of grill to keep warm. 6. Toast 4 sliced sesame bagels on the grill for 2min until slightly browned . Place burgers on each open bagel. 7. Top the burgers with mango salsa and then place the rocket leaves on top with other part of bagel and serve ----------------------------------------
