Cherry-Lime Ricky Pork Burgers

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients:

BURGER PATTIES:
2 lbs lean ground pork
2 T olive oil
1/2 C finely chopped burgundy cherries
2 T lime zest
1/3 C Cherry-Lime soda
2 T teriyaki sauce
1 1/2 tsp kosher salt
1/2 tsp pepper

TOPPING:
2 T butter
1 1/2 C thinly sliced onion
1/2 C chopped burgundy cherries
1 T lime zest
1 T lime marmalade
1 T soy sauce

6 Sesame seed hamburger rolls, split ( toasted)
3 T softened butter

Instructions:

Preheat grill to med-high heat. In large bowl combine pork, olive oil, 1/2 C cherries, lime zest, cherry-lime soda, teriyaki sauce, salt & pepper. mix well and form into 6 patties to fit your rolls. For Topping: In medium skillet, cook onions over med-high heat, stirring constantly until almost carmelized.. Add cherries, lime zest, lime marmalade and soy sauce. Continue to stir-cook until mixture is well carmelized. Remove to warm burner and hold. Grill pork burger patties over med-high heat for 3-5 minutes on each side until browned, and still moist. ( Temperature about 160 degrees internally)
Toast and butter the rolls on each side. Place pork patties on bottom half of roll and top with equal amounts of the cherry-lime ricky onion topping.
