Caribbean Sunshine Burgers

Ingredients

APRICOT AVOCADO MAYO
3 T fresh avocado, mashed
3 T Hellman’s Real Mayo
7 T Sugar Free Apricot Preserves
CARIBBEAN SUNSHINE BURGERS
1 T fresh thyme, finely chopped
2 T fresh oregano, finely chopped
2 T honey
2 T Sutter Home Chardonnay
1 T Caribbean Jerk Seasoning
1 T Cumin Dash of ground cinnamon
1 T coarse salt
1/2 T freshly ground black pepper
1.25 pounds of freshly ground beef chuck
3 T Canola Oil
6 King's Hawaiian Rolls
6 thin slices of red onion

 

Instructions

Get grill going so it will be hot and ready for you. Mix avocado, mayo and 3 tablespoons of the apricot preserves with a wisk. Leave some texture to this condiment. It doesn't need to be perfectly smooth. Cover and refrigerate. Mix remaining 4 tablespoons of apricot preserves, thyme, oregano, honey, Chardonnay, Caribbean Jerk seasoning, cumin, cinnamon, salt, pepper and ground beef chuck. Thoroughly incorporate all ingredients. Avoid overmixing. Shape into 6 burgers. Burgers will be slightly smaller than average, but don't worry – the taste will be huge! Brush hot grill with canola oil. Be careful! Place burgers directly on hot grill and cook to a perfect "almost well done" of 165 degrees. Remove burgers and cover with aluminum foil. Split the Hawaiian rolls in half like buns and grill lightly. Remove buns and slather with 1 1/2 tablespoons of Apricot Avocado Mayo. Add the yummy burgers and 1 thin slice of red onion. Serve immediately. Enjoy!
