Caribbean Stuffed Volcano Burger

Ingredients

Caramelized Jalapeno Onion Mixture
-5 Tablespoons Olive Oil
-5 Large Jalapenos,halved and sliced into strips.(Do not seed or de-vain)
-3 Large Sweet Onions,halved and thinly sliced
-1/2 teaspoon Salt
-1/4 teaspoon Freshly ground Black Pepper
Patties
-2 1/2 pounds ground beef (15% fat)
-3 Tablespoons SONTAVA! Habanero Hot Sauce
-1 Tablespoon Olive Oil
-2 teaspoons Salt
-1 teaspoon Freshly ground Black Pepper
-Olive Oil for brushing on the grill rack
-Salt and Freshly Ground Black Pepper, for sprinkling on patties
-6 Jumbo Sliced Plain Hamburger Buns
-Mayonnaise
-6 green leafy lettuce leaves
-6 slices of Havarti Cheese
-6(1/4 inch thick) large tomato slices, with center removed.

 

Instructions

Prepare a medium fire in a charcoal grill with a cover, or preheat a gas grill to medium. To make Caramelized Jalapeno Onion Mixture, begin by placing 12-inch, fire-proof skillet on grill rack and heating Olive Oil. Place Jalapenos in skillet and let sit for three minutes. Then combine onions, salt, and pepper. Cover with lid. Cook for 45 minutes, stirring occasionally, until mixture is caramelized. To make patties, combine ground beef, SONTAVA! Habanero Hot Sauce, Olive Oil, Salt, and Freshly Ground Black Pepper in large mixing bowl, and mix well. Divide patty mixture into 6 even portions. Cut each portion into two halves. Form the 12 halves into thin patties, to fit roll. Once Caramelized Jalapeno Onion Mixture is finished, spoon 1 heaping tablespoon of mixture onto center of 6 patties. Take one of remaining patty and place on top of one patty with mixture. Pinch edges of the two patties together and then form into a single round patty. Repeat with the rest of remaining patties. Brush the grill rack with Olive Oil. Place patties on rack. Evenly sprinkle patties with salt and pepper. Follow list of instructions, according to type of grill used. CHARCOAL GRILL: Cover grill. Cook for 6-8 minutes, until top is light brown. Flip (only once!) and sprinkle salt and pepper evenly, cover and cook for a final 5-6 minutes. In the final minute, place 1 slice of Havarti cheese on each patty. While cheese is melting, place buns, cut side down on outer edges of grill rack, and toast lightly. Remove patties and buns from grill. GAS GRILL: Leave uncovered. Cook first side for 8-10 minutes, until edges are lightly brown. Flip (only once!) and sprinkle salt and pepper evenly and cook for a final 8-10 minutes. In the final minute, place 1 slice of Havarti cheese on each patty. While cheese is melting, place buns, cut side down on outer edges of grill rack, and toast lightly. Remove patties and buns from grill. To assemble burgers, spread mayonnaise over cut sides of the buns. On each bun bottom, place a lettuce leaf and patty on bun bottom. Then place tomato "ring" on top of patty, and fill center with a heaping tablespoon of remaining Caramelized Jalapeno Onion Mixture. To finish, lightly sprinkle salt and pepper. Add Bun tops, serve, and enjoy! Makes 6 Burgers
