Caribbean Rum Burger

in 2006, my wife and I took our first Caribbean cruise. It was there that we discovered the many flavors and colors of the island cuisine. The many spices and blends of flavors. Sweet and tangy combination. When we returned home, a new option was available to our cooking choices.

Ingredients 

Ingredients:

2 Medium-size yellow Onions

1 Tablespoon Butter

1 Tablespoon Sugar (for caramelized onions)

One Pineapple, fresh, sliced ¼ " thick (6 slices)

6 Tablespoons Sugar (1 Tablespoon for each pineapple slice)

2 cups shredded Sharp Cheddar Cheese

1 cup Black Beans, drained

1 cup dehydrated papaya (Mariani Island Fruit Snacks) Dice small and then hydrate

a few minutes to soften and remove excess sugar

2 teaspoons Penzeys BBQ 3000 Seasoning

3 ½ Tablespoons Golden Rum1

½ Tablespoons Tamarind Concentrate (Laxmi Natural Concentrate from your local Indian Market)

¾ teaspoon Allspice ground seasoning

¾ teaspoon Penzeys Hungarian Sweet Paprika

1 ½ Tablespoons Penzeys Caribbean Jerk Powdered Seasoning

½ teaspoon Salt

½ teaspoon McCormick’s Peppercorn Medley

3 pounds, 85% Lean Ground Beef (makes six, 8 ounce burgers)

2 Tablespoons vegetable oil (for preparing grill grates)

6 onion topped hamburger buns

Instructions 

Preparation:

First caramelize onions. Slice and separate 2 medium onions into rings. Saute over low/medium heat (300-350 degrees) in a flameproof skillet on gas grill with 1 Tablespoon butter, 1 Tablespoon sugar, for 20 minutes, (watch heat closely, can burn.) When soft and brown, set aside.

Sprinkle pineapple with 1 tablespoon of sugar, on both sides, set aside.

Mix Cheddar Cheese, Beans, Papaya, BBQ 3000, Rum Tamarind, Allspice, Paprika, Caribbean Jerk and salt and pepper in a bowl. Mix the cheese & spice mixture together and set aside.

Make 6, good size balls of ground beef, dividing meat equally.

Pat each patty into a flat circle. Place 1/3 cup cheese and spice mixture in center of each of the 6 flat beef circles.

Wrap the ground beef around the mixture and into a ball. Seal mixture in securely.

Pat to make burger shape for grilling.

(make sure patty is completely sealed up so that no cheese mixture can melt out)

Clean gas grill grates with a steel brush, wipe and clean grates with 2 tablespoons of vegetable oil.

Cook on gas grill, medium heat, (350 degrees) until meat is done. (8-10 minutes per side)

Mixture inside will be melted.

Set burgers aside to stay warm. Place pineapple on grill for about 2 minutes per side, until caramelized.

Place burger on an onion-topped bun, top with caramelized onions, then pineapple and then crown with top bun.

Your Caribbean Rum Burger will have a sweet and spicy flavor. Sweet and smooth from the Rum, sweet spices, papaya and cheese. A sweet, smooth flavor and texture. The BBQ 3000, Tamarind concentrate and beans add a tangy counterbalance to the sweet.
