Caprese Burgers with Basil Mayonnaise

These Caprese burgers are so good and the flavors of fennel, oregano, sweet basil, tomato and mozzarella will take you right to Italy.

Ingredients:

Burger part:

1 1/2 pounds ground beef 80/20

4 ounces bulk hot Italian sausage

1 teaspoon oregano

1 teaspoon dried oregano

1 teaspoon dried sweet basil

1 teaspoon fennel seeds

1/2 teaspoon each kosher salt and freshly ground black pepper

Basil Mayonnaise:

1 cup mayonnaise

1/3 cup fresh sweet basil leaves chopped

1/2 teaspoon olive oil

1 teaspoon lemon juice

1 teaspoon capers, minced

3 anchovy fillets, minced

Bread:

6 crusty dried tomato cibatta rolls

Cheese:

6 slices Buffalo Mozzarella, each about 1 ounce

Toppers:

6 onion slices

12 tablespoons warmed marinara sauce

18 large sweet basil leaves

12 Boston Bibb lettuce leaves

Instructions:

In a large bowl combine all burger ingredients being careful not to over compact the meat.

Form into 6 patties.

Next make the Basil Mayonnaise by combining all Basil Mayonnaise ingredients, cover and chill.

Split the cibatta rolls in half lengthwise.

Pre heat grill to med high.

Grill the burgers to your desired doness, we like about 4 minutes per side on our gas grill.

The last 4 minutes of cooking, toast the buns on the cut side, put on 1 slice of cheese per burger, close grill cover to melt.

Put one burger on each bottom bun, slather 2 tablespoons of the Basil Mayonnaise on each top bun.

On each burger put 1 onion slice, 2 tablespoons marinara sauce, 3 basil leaves, 2 lettuce leaves
