California Dreaming Mizzou Burger with Candied Jalapeno Relish and Chipotle Slaw

Ingredients:

PATTIES:
2 Pounds Ground Chuck
1/4 Cup Finely Chopped Pickled Jalapenos
1/4 Cup Finely Chopped Fresh Cilantro Leaves
1/4 Cup Finely Chopped Red Bell Pepper
6 Green Onions, thinly sliced
2 Teaspoons Salt
2 Tablespoons Chipotle Tabasco Sauce
CANDIED JALAPENO RELISH:
1/2 Cup Finely Chopped Fresh Jalapenos, seeds and ribs removed
1 Cup Finely Chopped English Cucumber
1/2 Cup Finely Chopped White Onion
1/4 Cup Finely Chopped Red Bell Pepper
1/2 Cup Cider Vinegar
1/4 Cup Sugar
1/4 Teaspoon Celery Seed
1 Teaspoon Salt
CHIPOTLE SLAW:
1/2 Cup Good Quality Mayonnaise
2 Tablespoons Chipotle Tabasco Sauce
1 Chipotle Chile Canned in Adobo, minced
1/4 Cup Candied Jalapeno Relish, See recipe above
3 Cups Thinly Sliced Napa Cabbage

2 Tablespoons Vegetable Oil, for brushing on grill

6 Good Quality Kaiser Rolls, split

Instructions:

To prepare patties, in a large mixing bowl combine ground chuck, pickled jalapenos, cilantro, red bell pepper, green onions, salt and Chipotle Tabasco Sauce, mix until just combined being careful not to handle it too much. Form into six even sized patties, place on a plate and cover with plastic wrap.

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To prepare Candied Jalapeno Relish, heat a medium, heavy nonstick fire-proof skillet on the grill and add the jalapenos, cucumber, onion, red bell pepper, cider vinegar, sugar, celery seed and salt. Bring to a simmer and cook until the liquid is almost completely gone, about 5-7 minutes, stirring occasionally so it doesn’t scorch. Remove from grill and place relish into a medium mixing bowl, cover with plastic wrap and set on a bed of ice to cool.

To prepare Chipotle Slaw, in a medium mixing bowl, combine mayonnaise, Chipotle Tabasco Sauce, minced chipotle chile, 1/4 cup of prepared Candied Jalapeno Relish (recipe above), and Napa cabbage. Mix until combined and cover with plastic wrap and set aside.

When the grill is ready, brush with vegetable oil. Carefully place patties on the grill and close cover. Cook for 5 to 7 minutes on each side for medium, turning once.

About 2 minutes before patties are done, brush the split Kaiser rolls with the olive oil and place cut side down on outer edges of grill to toast. Watch carefully so that buns do not burn.

To assemble the burgers; spread equal portions of Candied Jalapeno Relish, then place one patty, top with even portions of Chipotle Slaw; cover with bun tops and serve.
