1/2 pound mild pork sausage
1/2 cup ricotta cheese
1 tablespoon Italian seasoning
1 1/2 teaspoons kosher salt
1/2 tablespoon minced garlic
1/4 cup minced onion
For the Topping:
1/3 cup olive oil
2 tablespoons minced onions
2 cups diced tomatoes
6 ounces baby spinach
1 tablespoon minced garlic
3/4 cup olive oil to brush on grill and on the burgers and bread during grilling
To complete the burger:
6 slices mozzarella cheese
6 onion-topped buns
6 tablespoons mayonnaise

Instructions

1. Preheat grill. 2. To create the hamburger patties for the burgers, combine the ground beef, sausage, ricotta cheese, Italian seasoning, kosher salt, garlic and onion. Mix completely. 3. Form the meat mixture into 6 round patties and set aside. 4. To create the topping for the burger, combine olive oil, onions, diced tomatoes, spinach and garlic. 5. Brush grill with olive oil to keep hamburger patties from sticking to the grill. 6. Cook patties for 12-18 minutes or until the internal temperature reaches 160 degrees Fahrenheit. Flip the hamburger patties every 3 minutes and brush with olive oil. 7. During the last 10 minutes of cooking, place the topping mixture in an aluminum foil pan and place on the top rack of the grill. Stir the mixture every 3 minutes to prevent burning. 8. During the last 2-3 minutes of grilling, brush the onion-topped buns with olive oil and toast on the grill. Make sure the inside of the bun is down. 9. Also during the last 2-3 minutes, add one slice of mozzarella cheese to each hamburger patty. 10. To assemble the burger, add hamburger patty with cheese to a bun, 1 tablespoon of mayonnaise, and 2 tablespoons of cooked topping mixture.
