BUFFALO WAHOO BURGERS

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Ingredients

1/2 half pound butter
4 3/4 teaspoons hot sauce
1 cup mayonnaise
1/2 cup, 1 tablespoon chopped cilantro
1 teaspoon fresh lime juice
Canola oil for brushing on grill
2 pounds freshly ground sirloin
1 teaspoon dried thyme
1 minced clove garlic
1 teaspoon Kosher salt
3 tablespoons grated onion
1/2 cup grated carrots
1/2 cup diced celery
6 Kaiser rolls split
Head of iceberg lettuce, cored, halved and sliced
6 or more slices Maytag blue cheese (if the slices are small you may need 2)

 

Instructions

Preheat gas grill for direct cooking. Wahoo the butter in a small metal saucepan: melt butter and 4 teaspoons hot sauce. Remove from grill and reserve. Mayo Dressing In small bowl combine mayonnaise, 4 tablespoons chopped cilantro and lime juice. Reserve. Combine 1/2 teaspoon hot sauce, sirloin, thyme, garlic, salt, 5 tablespoons cilantro, onion, carrots and celery. Form into 6 roll size patties. Brush preheated grill with oil. Brush tops of prepared patties with the Wahoo Butter and put coated side down on grill. Cook 4 to 5 minutes, turn patties and brush the other side with Wahoo Butter, cook 4 to 5 minutes orto desired doneness. During the last 2 minutes of cooking, brush the cut sides of the rolls with Wahoo Butter and place around edges of grill to lightly toast. Brush the top of the patties with some Wahoo Butter, top with one or two slices blue cheese. Spread toasted rolls with Mayo Dressing. Put some lettuce on bottom half of rolls, top with patties and then the top of the rolls. Serves 6.
