Buffalo Stroganoff Burger with Caramelized Mushrooms and Onions

Nothing spells comfort food like hot off the stove beef stroganoff. This burger separates itself from the original comfort food by adding in the lean buffalo then topping with sweet caramelized mushrooms and onions. With the stroganoff sauce and Swiss cheese overflowing the onion roll it is like a volcano of flavor goodness.


2 pounds of ground buffalo
2 eggs
2 teaspoons of garlic powder
2 teaspoons of black pepper
2 teaspoons of Worcestershire sauce
1 teaspoon of salt
2 tablespoons of unsalted butter
2 tablespoons of all purpose flour
1 ½ cup of beef broth
1 cup of sour cream
2 tablespoons of tomato paste
½ teaspoon of paprika
½ teaspoon of black pepper
¼ teaspoon of salt
2 tablespoons of olive oil
2 cups of thinly sliced yellow onions
1 cup of sliced baby bell mushrooms
2 tablespoons of vermouth
1 teaspoon of dried thyme
6 thick slices of Swiss cheese
6 hamburger sized onion rolls


Pre-heat gas grill to 400°F. Make burger patties: Mix together buffalo, eggs, garlic powder, black pepper, Worcestershire sauce, and salt. Section and form into 1/3 pound burger patties, set aside. Make the Stroganoff sauce: In a grill proof sauce pan melt butter then stir in flour until smooth. Once the butter and flour mixture is smooth add the broth, tomato paste, paprika, black pepper, and salt. Whisk together thoroughly and bring to a boil while stirring frequently. Once at a boil stir in sour cream then remove from direct heat, and set on grill over indirect heat. Caramelize the mushrooms and onions: Place a grill safe pan over direct heat then add olive oil and onions. Cook the onions until tender, then add mushrooms, vermouth, and thyme. Cook an additional 5 minutes stirring frequently. Cook the burgers: Next place the burger patties onto the heated grill. Cook 5 minutes then flip. Cook 5 more minute then flip. Place 1 slice of Swiss cheese on each burger patty. Cook an additional 3 minutes, then remove the burger patties. Build the burger: Place on burger patty on the bottom of the onion roll, add 2 tablespoons of the caramelized mushrooms and onions mixture, add 2 tablespoons of the stroganoff sauce, then place the top of the onion roll. Slice burger in half and enjoy


The stroganoff sauce will over cook if not careful. After stirring in the sour cream remove from direct heat and place on the grill over an indirect flame. If the sauce continues to boil remove from grill completely then place back on grill to warm before serving.
