Buffalo Dill Burgers

When my grocer started carrying locally raised ground buffalo, I was immediately intrigued. I am always looking for healthier alternatives for my family without sacrificing taste and consistency. What I found was that with the proper amount of respect for this lean meat, I could make a really fantastic and juicy burger!


1 lb ground Buffalo meat
2 oz brie or Camembert cheese (skin removed)
3 tbsp light or soy mayonnaise
1 tbsp red wine
2 tsp chopped fresh dill
1/2 tsp dried onion
1/2 tsp fresh minced garlic
1/2 tsp salt


In a large bowl combine meat, cheese, red wine, salt and onion. Form into patties and grill SLOWLY over low/medium heat until desired temperature. Top burgers with mixture of mayonnaise, dill, and garlic. Serve on a whole grain bun or Kaiser roll with fresh spinach.
