Buffalo Burgers with Mushrooms and Balsamic Sauce

Ingredients

3/4 cup balsamic vinegar
1/2 cup reduced sodium soy sauce
3 cloves minced garlic
2 tsp cracked pepper
1 tsp seasoning salt
3 Tbsp dijon mustard
2 Tbsp worcestershire sauce
1 lb ground buffalo
1 tsp pepper
1 Tbsp canola oil
1 medium onion, sliced
8 ounces fresh mushrooms, sliced
4 slices Jarlsberg swiss
4 hamburger buns

 

Instructions

Prepare grill for medium heat. Mix first 6 ingredients to make balsamic sauce and set aside. Combine buffalo, pepper, and 1/4 cup balsamic sauce. Shape into four patties. Set aside. In a nonstick pan, combine oil, onion, and mushrooms. Saute until tender and lightly browned. Keep warm on low heat. In a nonstick saucepan, bring balsamic sauce to a boil. Reduce heat slightly, and cook until sauce is reduced slightly and thickened. Keep warm on low heat. Place burgers on grill, grilling for about 5-7 minutes per side until desired doneness. If desired, place buns cut side down on grill towards the end of cooking to lightly toast. To serve, place a patty on each bun, and top with onion/mushroom mixture, balsamic sauce, and a slice of jarlsberg swiss cheese. Enjoy with a side salad and a glass of merlot!
