Ingredients:

Patties
2lb ground pork
1lb sweet fresh pork sausage
1 tsp salt
1 tsp cracked black pepper
1/2lb gouda cheese

Thai Coleslaw
1/2c plain yogurt
1/4c lime juice
1/2 tsp of El Yucateco Green Habebero Sauce
1 tsp of Thai sweet chili sauce
1 garlic clove minced
1/2 a large head of cabbage
3 to 4 scallions
1 red bell pepper
1/4c of fresh basil
1/4c of fresh mint
1/4c of fresh cilantro

Curried Onion Marmalade
2 large vidalia onions
1 well-ripened mango
2 tbsp of red curry powder
1 tbsp of lemon pepper
1/2c of pineapple juice
1 tbsp of red wine vinegar
2 tbsp of ketchup
1 tbsp of Lea & Perrins

Candied Bacon
12 slices of thick-cut bacon
1/2c of packed brown sugar
1 tbsp of cajun seasoning
1 tbsp of cracked black pepper
1 tsp of chipotle powder

1 large french loaf cut into 12 slices toasted

Instructions:

1. For the slaw in large bowl combine the first five ingredients for the dressing. Then thinly slice the cabbage, bell pepper, and scallions and toss with dressing. Add chopped herbs right before assembling.
2. For the marmalde toast the curry powder in a dry skillet until it is fragrant. Saute sliced onions until translucent and add curry powder and lemon pepper. Remove all of the flesh of the mango and mince. Add mango to the mixture and continue to saute until the mixture is dark in color. Add the rest of the ingredients and reduce until most of the extra liquid is gone.
3. For the patties knead the meats until just combined. Seperate mixture into six patties and season with salt and pepper. Place them on a hot grill and cook for 4-6 minutes a side. Place sliced cheese on hot patties.
4. For the bacon arrange the slices on a foiled broiler pan. Mix the rest of the ingredients for the rub and place about one tablespoon on each slice. Bake in a 400 degree oven until firm then broil until just crisp.
5. Slice the loaf into 12 thick slices brush with melted butter and place them on the grill to toast. When bread is done take a slice and place some marmalade, than a patty, 2 slices of bacon, a good of slaw, and one more bread slice.
