Bring Extra Napkins Burger (Chorizo and Beef Burgers with Caramelized Onion and Mushroom Slaw, Spicy Smoked Mayo, Tomato and Havarti Cheese)

When I first experimented with this recipe, I was preparing it for a small dinner party/ BBQ that we were having with some friends. During the course of the meal, however, at my guests’ requests, I must have gotten up for more napkins at least three times. For, the cloth napkins that had originally been laid at the table were not nearly enough to contend with the mess that was created while eating the burgers. The best part about it, though, is that, regardless of how sloppy these burgers can be, everyone that has eaten them has asked for and used the recipe. In fact, they have become a regular - and anecdotal - part of our friend’s BBQ menus ever since………now with many extra napkins provided, of course.

Ingredients 

Spicy Mayo
¾ cup mayonnaise
1 tablespoon fresh lime juice
1 teaspoon Cajun seasoning
Caramelized Onion and Mushroom Slaw
1 ½ pounds Vadalia onions, thinly sliced
1 8 oz packages of white mushrooms, thinly sliced
3 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons salted butter, softened
2 tablespoons light brown sugar
Patties
½ pound Chorizo sausage, very finely diced
1 ½ pound ground beef
1 teaspoon salt
freshly cracked black pepper to taste
vegetable oil for brushing the grill
6 large Kaiser rolls
12 slices Havarti cheese
1 tomato, thinly sliced into 6 rounds
extra butter for roll

Instructions 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. FOR SPCIY SMOKED MAYO: Mix all ingredients in a small mixing bowl and chill. FOR THE HAMBURGER PATTIES: Combine all four ingredients in a mixing bowl and blend. Shape mixture into six patties and set aside. FOR CARAMELIZED ONION AND MUSHROOM SLAW: Combine all ingredients in a mixing bowl. Ensure that the onions and mushrooms are well and evenly coated. Put mixture on a fire-proof skillet and place on grill. Cover grill and allow the mixture to cook down until onions and mushrooms are golden brown and very soft. If necessary, add more butter to prevent mixture from becoming too dry. Remove from grill and cover immediately. FOR GRILLING: Immediately after removing the slaw, prepare grill for burgers by brushing with vegetable oil. Place patties on the rack and cover the grill. Cook burgers to desired doneness, turning them once, about 4-6 minutes on each side for medium-rare to medium. If desired, during the last few minutes of cooking, place the Kaiser rolls, cut side down, on the outer edges of the rack to toast lightly. Immediately after removing the burgers from the grill place 2 slices of Havarti cheese on each burger. ASSEMBLING THE BUGER: Butter both halves of the Kaiser roll. On top half of the Kaiser roll, evenly spread spicy mayo. On the bottom half, place cheese topped burger. Thickly layer with caramelized onion and mushroom slaw followed by a thin slice of tomato and combine the two halves.
