Boliche Burgers with Citrus, Avocado and Queso Fresco Relish

Ingredients

Chorizo Patties:
1/3 pound fresh Mexican Chorizo, with casings removed
2 Tablespoons tortilla crumbs

Beef Patties:
1 1/2 pounds ground chuck
1/3 cup chopped cilantro
4 minced garlic cloves
1 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
1/4 teaspoon ground chipotle pepper
2 teaspoons ground cumin
3 Tablespoons finely chopped green olives with pimentos

Citrus, Avocado and Queso Fresco Relish:
1/4 cup coarsely mashed avocado
1 cup coarsely chopped avocado
4 peeled and seeded grapefruit segments, coarsely chopped
1 medium peeled and seeded Moro (blood) orange, coarsely chopped
2 Tablespoons minced red onion
1 teaspoon finely grated lime zest
1/4 cup crumbled Queso Fresco cheese
1/8 teaspoon kosher salt

12 thick cut slices bacon
6 Kaiser rolls, split

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium high.

To make the Chorizo patties: In a medium bowl combine the Chorizo with the tortilla
crumbs. Form into 6 small patties. Cover and set aside.

To make the beef patties: In a large bowl gently combine the ground chuck, cilantro, garlic, salt, black pepper, chipotle pepper, cumin and olives. Form into 12 equal-sized patties. Center a Chorizo patty onto 6 of the beef patties. Place the remaining 6 beef patties on top of the Chorizo patties. Press edges of beef patties together to tightly seal around the Chorizo patties. Cover and refrigerate for at least 15 minutes.

To make the Citrus, Avocado and Queso Fresco relish: In a large bowl gently combine the mashed avocado, chopped avocado, chopped grapefruit, chopped orange, onion, lime zest, Queso fresco and salt. Cover and refrigerate until serving.

Place the bacon in a large, nonstick, fire-proof skillet and cook until crisp. Cover with foil to keep warm and set aside. Place patties on the grill rack, cover, and cook, turning once, until done to preference, about 5 to 7 minutes per side for medium doneness. During the last few minutes of patties cooking, place rolls cut sides down on the grill rack to lightly toast.

To assemble the burgers: Onto each bun bottom place a cooked patty, equal amounts of the bacon, equal amounts of the relish, and the roll tops.
