Ingredients

Pimento Cheese
1/4 cup of grated white cheddar cheese
1/4 cup of grated yellow cheddar cheese
2 tablespoons grated white onion
7ounces diced roasted red peppers (jar)
1/3 cup mayonnaise
1 teaspoon hot sauce
Burger
1 3/4 pounds ground beef (80/20)
1/4 pound ground uncooked country ham
Extras
6 slices of tomato 
6 sourdough buns
6 boston bibb lettuce leaves
vegetable oil for the grill
makes 6 burgers

 

Instructions

1. Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. 2. Combine grated white and yellow cheddars in bowl with diced roasted peppers, grated onion, mayonnaise and hot sauce. Cover and refrigerate. 3. Combine ground beef and ground country ham gently but throughly, do not compact mixture. Divide and pat out 6 equal patties, cover and set aside. 4. Slice tomatoes and clean bibb lettuce. Cover and set aside. 5. Brush grill with vegetable oil. Place the patties on the rack, cover, and grill until browned on about 4 minutes per side for medium rare. The last two minutes brush split sourdough buns with oil and place on the rack, toast lightly. 6.Place lettuce leaf and tomato on the bottom bun. Place burger on next and top each burger with equal amounts of the pimento cheese and bun top.
